vegetable pulp


The downside of the cold-presssed juice craze? Thousands of pounds of discarded vegetable pulp. At wastED, that leftover beet and carrot pulp made for a new spin on the veggie burger.

Topped with green leaf lettuce scraps, melted Jasper Hill cheese trimmings, and bruised beet ketchup, the wastED juice pulp cheeseburger is served on a repurposed bread bun made with stale rye bread (courtesy of Balthazar Bakery).
