summer squash vines

Just before the frost, farmers across the Northeast were pulling zucchini and summer squash vines from their fields to make way for future crops. The vines themeselves are typically composted, but there’s a tradition for cooking them, too. At Blue Hill at Stone Barns, the vines are peeled, blanched and served "alla cacio e pepe”—an ode to the classic Roman pasta dish.
